pesara pappu charu

Ingredients:

pesara pappu-2 cups
tamarind
salt
chilly powder
talimpu ginjalu
onion

Process:

soak the pesara pappu for 5 hrs in the water . drain the water . now boil the pesarapappu in the water,after it comes to a boil .drain any excess water if present.then make the boiled pappu into paste using mixy..
then take little tamarind juice and it to the paste add a pinch of salt and chilly powder. seasen the liquid . then add onions to it and switch off the stove

Garlic Chicken

Ingredients:

Chicken drumsticks 1 lb
Plain yogurt 1 cup
Green chilies 4
Medium sized onion (finely chopped) 1
Ginger 1"
Cloves garlic 3
Salt and black pepper to taste
Oil 4 tbsp
Cilantro for garnishing




Directions:

  • Blend green chilies, ginger, garlic, and black pepper to a fine paste.
  • Add yogurt to this mix.
  • Marinate chicken drumsticks with the above mix and leave it for an hour.
  • In a non-stick pan, heat enough oil and let onions fry until brown.
  • Add chicken drumsticks to the onions and fry them until done.
  • Add some salt to taste and garnish with cilantro.

    Potato Curry

    Ingredients:
    Potato-4 no's
    Big onion-2 tbs
    Turmeric powder-1/4 tsp
    Curry leaves-few
    Green chillies-4 no's
    Coriander leaves chopped-1 tbs
    Mustard-1tsp
    Salt to taste

    Method:

    Boil the potatoes and mash it. Heat oil and season mustard. Saute onions, chillies and curry leaves, add turmeric powder and required water. When the water boils add the mashed potatoes and salt. Heat the curry for few minutes and add coriander leaves when cooked.

    carrot-1/4 cup(grated)
    cucumber-1/4 cup(choped)
    onion-1/4 cup(finely choped)
    tomato-1/4cup(choped)
    beet root-1 spoon(finely grated-optional)
    black pepper powder-1/2 spoon
    salt-to taste

    vegetable dal


    Ingredients

    Toor Daal - 1 cup
    Potato - 1
    Tomato - 1
    Curry leaves
    Black pepper powder - 1 or 2 teaspoons
    Salt
    Oil
    Mustard seed
    Cummin seeds


    Method
    Wash and peel the potato.
    Cut the potato and the tomato into pieces.
    Then add them to the dal along with the curry leaves, black pepper and pressure cook it.
    After it is done, take out from the cooker, add salt and the seasoning. Serve with plain rice.

    Kajji Kayalu (andhra sweet)

    Ingredients

    Maida(Allpurpose flour) - 150 gm
    Jaggery(Sharkara) or sugar - 75 gm
    Cardamom(Elakka) powder - 1 tsp
    Cashewnuts - 25 gm
    Raisins(Onakka munthiri) - 15 gm
    Poppy seeds(Khashakhasha) - 1 tsp
    Roasted ground nuts
    (Kappalandi) - 25 gm
    Dry coconut powder - 100 gm
    Ghee - 1 tsp
    Oil for frying

    Preparation Method
    1)Sieve maida.

    2)Melt ghee and pour it into the maida and knead it to make a soft dough, by using little water.

    3)For the filling, grind the dry coconut to coarse powder.

    4)Grind cashewnuts, ground nuts, khus-khus to a coarse powder.

    5)Mix sugar with the above powder along with cardamom powder, coconut powder and raisins.
    Keep it aside.

    6)Make small lemon size balls of the dough and roll it like chapathis and cut into semi circles.

    7)Take one part of the chapathi, shape it into a cone and fill it with the mixture. Close the top by wetting your fingers.

    8)Fry it in hot oil till golden brown.

    Gulab Jamuns easy method

    1Ingredients:------------

    1 c Bisquick

    2 c Carnation powder

    2 c Water

    1 1/2 c Sugar

    4 pods Cardamom

    few drops Rose water

    1/2 stick Butter (4 T)

    1/8 c Yogurt

    Milk

    Oil for frying


    Method:
    Method:-------Heat butter and pour in a bowl. Add Bisquick, carnation powder andyogurt and blend together. Knead well adding milk if necessary. Make asmooth ball, cover and let rest (30 minutes?). Make 12-14 small balls.
    Heat the water, add sugar, bring to boil, add cardamom seeds and simmer. Boil, then simmer to reduce the water by half. Heat the oil until hotand fry the balls to a golden brown or until they are darkbrown---almost black.


    Soak in sugar syrup until they double in size (1 hour or overnight). Serve hot or cold.
